The low side
I almost cried when I saw this video. Its intriguing when something so simple actually touches you so easily. Probably it is because we could relate to it so easily. Its been a while since I have lost my dad... I just do not wanna lose my mum ever.. For this, I would say that I would choose to be a coward and I would rather die before my mum.. I feel that I cannot take that feeling of anguish.. I would just break down...

I really need to rethink what have I been doing all along.. Its kinda sad when you are nice to ppl and they treat you for granted.. Maybe i need to be even more realistic in this field... Seriously..
Many things has happened over the past few days.. Simply too many things.. I have somehow lost the faith of what I used to believe in.. I have somehow lost the determination in all of the things that I have put all of my heart and soul in.. Its always easy to judge a book by its cover. However, little do people know that it is one of the most fatal mistakes one could ever make in life.. Everyone deserves a second or even third chance.. No one can ever get something totally right for the first time ever..
Probably, at this point of time, I have lost my direction in life.. I do have all of the materialistic targets and ideals that I want to achieve at certain stages of my life. However, other than that, I have totally no idea to what I truly desire and hope to attain. Probably, going into army could help me out in certain stuffs.. But I seriously need to sit back and think about what I really need to do from now on.. I just simply can't afford to waste anymore time any longer..
If anyone were to ask me,
"Where is your God?"
I would not know what to answer to them for I shan't answer anything which is not from the bottom of my heart..
I seriously need my faith and direction back.. I need it back desperately..

On Mega Sunday, I created a menu for the lovely couple whom would be spending their first year together SOON! Alan and Serene! HAHA!
The menu would be as follows:
1st course,
Caesar Salad
Nicoise Salad in Homemade dressing with Romano Cheese and Smoked Salmon seasoned with dill
2nd Course,
Beef Tartare
Raw beef with avocados in a Japanese Mayo Dressing
3rd Course,
Fettuccine
Fettuccine in a cream based sauce with grilled chicken, portobello mushrooms, tomatoes and baby sprouts.
4th Course,
Surf and Turf
Beef Chucks in a Japanese garlic and pepper sauce served with paprika prawns and thai asparagus.
5th Course,
Dessert
Cream of Strawberries in a mascarpone cheese milk base.
Simple, bistro fare. =D

Happenings on Saturday!
Went back to TP On Saturday to relive some memories and suan some of the potential graduating students!
Oh wells.. Really reminded me of the happenings exactly a year ago.. (Please see previous post for more EMO details.. LOL!)
Really missed the TP mass dance.. However, we (Alan, Serene and myself) went on to Bark's!!!! *we did not wanna wait for the LONG debrief, etc.
We were seated at the Bar counter initially as it was FULL!
We had ordered the following:
Caesar's Salad with a weird fried chicken cutlet when we kinda expected grilled chicken!
Their signature FRIED CHICKEN WINGS! (It arrived after the ribeye unfortunately)
I have personally ordered a Ribeye with Green curry mashed potato!
Serene ordered the Tenderloin!
...and ALAN ordered the SEAFOOD PASTA! (which took quite a long time to come unfortunately)
We really had quite a good time there and ANALYZING CERTAIN STUFFS.. LOL!! It was quite hilarious to be very honest.. HAHA!
Next up, after sending Serene back home, Alan and myself went on to CPF to catch some of the action..
and not forgetting
LYNETTE! I HAVE FINALLY TAKEN A PIC WITH YOU!!!!! *though it was really damned rushed..
However, bros called and its off to 85!!!!!
We ordered the legendary BA CHOR MEE!

Whenever I get a chance to really experience an extremely beautiful song like this, I would just sit back and think of many stuffs that probably I have missed out in life.. Missed out as I was working too hard to support myself and have the high end lifestyle that I have always desired..
I have always used the phrase, you win some, you lose some.. If I did not work as hard, I would really experience so much more in life.. I kinda experienced that as I went back to look at FOC this year. I have seriously missed out on too many things.. Too many things that it has made me regret certain things..
I have lost a few long lasting relationships due to my obsession with working as well.. Indeed, I was blessed with a few individuals that I have failed to cherish.. Now as I look back and reminisce on the past, I do feel a sense of disappointment in myself.. Probably I could still be with some of them even till today despite my personality.
However, if I did not work as hard as I did, I would not have gained so much experience and enjoyed the luxuries that money can buy. I have supported myself since secondary school.. Usually, this would be a case for those families whom are not as fortunate. However, I must admit that my parents are quite well to do.. At least for themselves given their high spending lifestyle. I kinda chose to support myself to prove a few things and to become more independent. Family ties were getting extremely out of hand at that time and given my stubborn personality that I can accomplish anything if I just try, I gave it a shot.. and succeeded...
I kind of wondered if there was any way at all that I could somehow balance those two important elements of my life at the same time.. However, there are always limits to a person.. My limit would be with my capability of primarily focusing on only one major element at a time as I always focus on one thing and neglect another sometimes..
I have to change.. No, I must change.. Its a definite requirement..
Come on Mark.. you have proven once before that challenges are just rocks along the road, my determination and hunger to win is limitless..

SHUTTER The Movie.... *ang moh version
Alright, I went to catch Shutter today (Ang Moh Version) with Boon, Yang and Nic after my dance class @ LA Dance. Generally, the four of us had something to cover our eyes during the scary parts. BUT HEY! It was just for the fun of it. It was quite humorous though especially when Bruno did the Superman thing and fell to his death.. Thinking that he could actually FLY!
Dumbass...
Anyways, the movie was in my opinion, 1/5 stars. The 1 star attributed to the good looking casting crew (PS: I kinda liked the asst. photographer MAYA HAZEN, she played Seiko *NOT THE FREAKING WATCH BRAND @ the movie!!!)

The Piano...
Being emotive has always been an asset that I possess. I have been quite lucky to be able to release my frustrations and sadness to an instrument - The piano.
For some reason, throughout these years, despite being so temperamental, I have always been able to keep my cool and think of the most advantageous or sensible alternatives to volatile situations. Yes, I have been into a few scuffles. However, I have always benefitted in a way or another.
Opportunist? Yes, I will admit that I am such who jumps and grabs the best offer on the table. This is regardless of the situation. Heartless? Probably. But I am always keen to get what's best and ideal. As I have always mentioned, life is seriously too short to make even a single margin of mistake. Probably that is the reason to why there are certain individuals who deals with depression in the most extreme manner and behavior possibly displayed.
The optimism to raise up one's morale to capitalize on the best of the worst has rarely been in the minds of most people. This is a situation where people start to get extremely depressed about certain mistakes that they have made in life. A true winner always capitalizes on such situations.
Indeed, I do strive to be an individual like that. The question would NOTbe "Am I Capable to do that?"
Capability is something that one is born with. Examples would be with people who can run faster than you, people who can draw or paint better than you. A key factor that many do not realize is with hard work, one can be as capable too. David Beckham did not become a worldwide phenomenon just like that. He trained like a dog everyday even till today just to get an inch of improvement in his precision for free kicks.
The question would be "Would I have enough time to become like that?"

I would be starting off on my photography storyboard portfolio for my admission into La Selle (Hopefully) to further my studies in design, a field that I have always wanted to be in. I have always wanted to be a designer or a conceptualizer..
However, due to parent's wishes, I have to concentrate on being a realistic individual that I am today. I have always wanted to be a carefree creator of ideas, someone to break new ground and create new trends..
Well, age has caught up with me and I find myself unable to do so as of now.. If only we could turn back time... If only...

Soccer nights are defined as nights with MAN U matches. The group of Boon, Nic, Pao and myself are the faithful supporters of the elite Manchester United Team. However, we do also frequently watch matches with our beloved lousy liverpool fan, National Soccer player, Wee Chin Yang. I do sympathize with him sometimes whenever Liverpool Loses, but hey! they are lousy! =D *we still love you Yang.. =D
Usually, we would kick off the match with suppers before the match if it is late. However, on some days, I do prepare suppers for them.
For one of the nights, I cooked this for them
Cajun cream pasta with green asparagus, white button mushrooms and cherry tomatoes with a mustard braised salmon.
Alright. Back to topic. during the match, I would be checking up with my mac on statistics of the match as seen below.

Alright, let me attempt to be a critique and assess one of my preferred dining spots @ Suntec City, Olio..
This dining bistro serves modern cuisine with Singapore's very own local flavors in certain dishes such as its Laksa Linguini, which is essentially an "Aglio Olio" style pasta dish but with the Laksa paste as its base ala "pesto" style...
A Key factor that I look out for whenever I dine at a dining establishment would be with an Open Kitchen concept. The excitement going on in the kitchen can be a fun sight to admire as they work as a team or an ensemble to assemble all of the components of a dish together. In addition, it also brings the kitchen closer to the dining room as one common area instead of two separate areas.
An insight of Olio's kitchen can be seen above.
I went together with a LOVeLY person who is also known as SERENE LIM who I treat as my elder SIS.. *given that she is older than me.. =X but of course, I still love her for all of the tender loving care that she has given to her "SISTER" which is me.. LOL!
and yes, those are RARE solo pics of her given the fact that she RARELY takes solo pics..
anyway, we had ordered 1 soup, 2 starters and 2 mains...
We had ordered a simple soup of the day, which happened to be Minestrone Soup..
The seemingly simple Minestrone Soup. One of the easiest and simplest dishes to prepare in a bistro. It also indicates how lazy or how attentive a kitchen is. Always a favorite choice of "soup of the day" for lazy chefs as they are so simple and "canned". However, I was pleasantly surprised that Olio makes their minestrone soup from scratch. I could really taste the Vegetables in the Minestrone together with the tomato soup base that was freshly made. Unknowingly, if you really do notice and taste extremely attentively, eg: a blind taste test... You can easily differentiate a bowl of Canned Minestrone and a Freshly made Minestrone soup.. The toasted Garlic bread gave me a good reminiscent and familiar taste as a good old fashion style of having soup. A good start for the review...
Next up we had ordered 2 salads.. A Thai Chicken Salad (Top) and a Caesar Salad with Chicken (Bottom). I was slightly disappointed as there was no smoked salmon for accompaniment to the Caesar Salad which is essentially a MUST HAVE as yet another indicator of the quality of ingredients of a kitchen.
Let me begin with the Thai Chicken Salad. Generally pleasing. However, there was nothing spectacular about it. Quite ordinary but I shall applaud the colorful presentation that the dish came along with.
Next up, The Caesar Salad. The Caesar Dressing was spot on and the chicken that came along it was lovely. A dish that you can't go wrong with unless you really screw up. In my opinion, a good way to assess a good restaurant would be to order the simplest of dishes. If a restaurant can fuck that up, what chance does it have for a good review?
Moving on to the entrees. Serene ordered a Tenderloin (Top) and I have ordered their signature Pan Fried Salmon with Miso Cream Pasta (Bottom)
Let me begin with the Tenderloin which was requested Medium. The chefs did quite a splendid job in maintaining the tenderness and the juiciness of the beef. The texture was extremely good and well maintained given that I had only sampled the tenderloin slightly around 10 mins after it was served. The only minus point was with the garnishes or Vegetables. I was actually hoping for more creativity rather than just butter sauteed baby carrots and broccoli. Probably one of the reasons to why I adore Fish & Co would be with its use of Melons as a garnish Vegetable which is not so common and offers a different dimension from the other dining establishments.
The Miso Cream Pasta on the other hand, was rather interesting. The elements blended well together as a harmonious dish and the salmon roe on the pasta was great. I wasn't too sure about the konbu kelp on the pasta as a vegetable garnish apart from the sprouts. The Konbu wasn't really helping the dish much as its texture was too similar to the cappellini with it. I had to put in quite a significant amount of cheese as the Miso kinds of neutralizes the creaminess of the dish. However, upon adding the cheese, the flavor and aroma of the dish stands out and speaks well to me. The whole dimension of the dish just expands with the cheese.
Overall, the dishes were above average compared to some of the more frequently patronized places that I go to. The service was very good given that they were extremely attentive and have topped up my water (which was quite frequently given that I am a water bucket) whenever my glass was getting empty. The ambience is very nice and modern but the empty space at the back of the restaurant leaves some areas to be desired. Serene totally loved the cushioned chair area and I was like O_O!
The pricing of the menu was actually alright given the type of dishes and ingredients given. I feel that it is quite value for money. This is extremely important in any dining establishment as Singaporeans feel quite the pinch if they are paying so much for so little.
